Place beverage glasses to the right side of the place setting in order of use starting with the sherry glass in the lower right side and above it the white wine glass, red wine, water and champagne glass. Sherry is served as an aperitif to stimulate the appetite, usually with the soup course when sherry is an ingredient in the soup. Serve white wine first in the smaller of the wine glasses. Serve red wine in a glass with a larger round bowl to allow the wine to breathe. Rules regarding pairing wines with food vary and are not based on col our or the food.
Champagne is served with dessert, used for toasting or served with an appetizer. The water glass remains on the table throughout the meal. Remove beverage glasses if a guest refuses the beverage or after they are used. To refuse a beverages simply make eye contact with your server, touch the rim of the glass with your finger and shake your head no thank you.
